Ooey Gooey Chocolatey Goodness!



I had an insane craving for some ooey, gooey, chocolatey goodness tonight, so I decided to try my hand at baking again.

I went searching for a recipe that would work, not caring about fat or calories or sugar this time. I found one I wanted to try, but it wasn't quite right, I had to fix it. Make it my own.


Brownies

1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3/4 cup creme fraiche

1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

2.Using a microwave safe bowl, melt 1/2 cup butter. Remove when melted, and stir in sugar, eggs, and 1 teaspoon vanilla.

3.Mix 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder and add to the butter, sugar, egg, and vanilla mixture. Mix well and add creme fraiche.

4.Spread batter into prepared pan.
Bake in preheated oven for 25 to 30 minutes. Do not overcook.


Frosting:

2 80% Chocolate bars (or about a cup of semisweet chocolate chips
4 tablespoons butter
1/2 cup creme fraiche
1 teaspoon vanilla extract
1/4 teaspoon salt
1 3/4 cups confectioners' sugar (I'm not a big fan of super sweet things, so I went easy on the sugar)

1. Melt the chocolate and butter together in the microwave. Remove, mix well and let cool.

2. Blend in the creme fraiche, vanilla, and salt.

3. Gradually add the confectioner's sugar, beating well, until the frosting is spreadable.

*If the frosting hardens before you've been able to spread it on your brownies (I was busy cooking dinner and left my frosting to sit too long.), just pop it in the microwave for about 10-15 seconds and it's good as new.

4. Spread that ooey, gooey, chocolatey goodness all over your brownies and serve.


These brownies are more like a fudgy cake. They're not super dense, but they're incredibly moist and gooey. They're also very rich. 

Thankfully, I managed to give 1/2 of them away before I could sink my teeth into them. Now, I just hope my husband will eat them all before I can, otherwise I'll be tempted to polish them all off.
