Experimental Potato Salad


This recipe was discovered by complete accident, but it was quite a pleasant accident.

Start by washing your potatoes. (Or have your husband do it.)

He decided the skin needed to be scrubbed off, but I made sure he only skinned half of them.

Toss the potatoes in a pot and add boiling water if you have an eletric kettle, otherwise add water and bring to a boil.

Cook for about 15-20 minutes, or until tender.

While the potatoes are cooking, mix together (adjust ingredients according to your personal taste) mayonaise, dijon mustard, honey, pickles, a little salt, and some pepper (or pepper mix).


When the potatoes are finished, remove from pot and cool (cold potatoes are best).

Cut potatoes into bite-sized pieces and add to the rest of the ingredients, mix well and enjoy!
