I've had a few people asking me about all the culinary differences between the US and Denmark. Unfortunately, I can't really answer a whole lot of those questions, yet. I can, however, share with you some of the things I've learned (or am learning). So, today, I'm going to share with you my pretty typical Danish lunch.
Here's what you will need:

| 2 slices of Danish Rugbrød, about 5 inches off an English cucumber (sliced lengthwise), cream cheese, a tomato (sliced), lemon juice, and smoked salmon |

Anyway, back to the food.
Start with whole grain Danish rye bread (fuldkornsrugbrød). This stuff is far from your typical American Rye bread. It's difficult to make (properly), and difficult to find a good recipe to use. It's fairly low calorie, and chocked full of fiber.
Just look at those plump rye kernels.

Layer with your cucumber, a pinch of salt, and a dash of pepper mix (or however much you prefer).
Do the same with the tomatoes.
Finally, top with the smoked salmon, drizzled with lemon juice.

ReplyDeleteKathy, it took me years before I was able to eat smoked salmon. I like it in sushi, but that's about it. My ex-husband's family has a tradition of eating smoked salmon and cream cheese on bagles, for Christmas breakfast. I would try to eat a little bit of the smoked salmon, but wanted to gag everytime. So I just stuck with turkey breast. One day, I realized the salmon actually tasted quite similar, and even better if you add some lemon juice. So, that's how I've been eating it since.

Hey! I live in Denmark too! :D I love our "smørrebrød" with rugbrød (ryebread) :D Though too much of it is pretty hard on the stomach! :O hahah :D Will be a follower now! :)
