Green Smoothies


Yesterday, while catching up on all the blog posts I'd missed due to the lack of a router, I came across a post on my dear friend Kathy's blog about green smoothies and raw food. I HAD to make myself one. I decided I would make one for breakfast, and I am sure glad I did! It was delicious! Nice, cooling, and refreshing. The perfect eye opener.

Ingredients:


1 large, ripe banana
2 medium Granny Smith apples, cored and quartered
1 medium nectarine (or peach)
1 inch of fresh ginger, peeled and cut into thin discs
1/2 of a large cucumber
3-4 cups of raw spinach
1/2 to 1 cup soymilk or plain yogurt
1/4 cup water (omit if using soymilk)

Because I don't have the mother of all blenders, I used my food processor. I could have transferred it to my blender after the food processor took care of the hard part, but it was 6:30am and I was too lazy tired. So, instead of a 'smoothie' I enjoyed a fabulous 'chunky'!
