Is it just me or has the past week flown by? I've been around but I haven't posted anything. I've even been keeping up with my pumpkin recipes, though not as crazy as last week. I thought I'd share with you some of the things I've been up to.
Last Friday, Hans and I went to a surprise baby shower for our friend Kathrine.
We had a pretty relaxed weekend, and I made some vegetable stock, which then turned into chicken, pasta, and mushroom soup. I had all those veggies left over from making my stock and wasn't sure what to do with them. I decided to put them in a bowl in the fridge and the next evening for dinner I had a brilliant idea.
I added some breadcrumbs and a couple of eggs to the cold veggies and mixed it all up and made veggie pancake-burger-things. These were by far the most delicious veggie patties I've experienced in my entire life!
Then on Monday, my sweet husband brought home some flowers, just because.
On Tuesday, my friend Sarah came over and I taught her how to make pumpkin pie. Because she was a pumpkin virgin, I decided to stick with the classic Libby's recipe because of how easy it is.
Unfortunately (for presentation and photo purposes), our pies cooked a bit too long.
Thankfully, they tasted freaking awesome!
Yes, we cheated and used the store bought dough for our pie crusts.
But we still used fresh, homemade pumpkin puree.
On Wednesday, I made my newest favorite lunch. Stuffed zucchini boats.
These were super easy and extremely filling. Just a zucchini cut in half lengthwise, then scooped out the middle and added a little salt and pepper and layered with low fat cheese and diced chicken breast. I popped them in the oven on 300C (that's like 572F) for about 15 or so minutes and Ta-da!
After lunch, I made some of my grandma's pumpkin cranberry bread (which I will be posting the recipe for tomorrow). This stuff is out-of-this-world good! Sadly though, mine look nowhere near as fantastic as hers.
Then we made it to Thursday. After not sleeping much the night before, and being up at 6am for an appointment with the baby doctor (more on that soon), Hans and I had a birthday party to attend.
Those of you who follow my personal facebook know that Hans just got his drivers license exactly 1 week ago. Those that know me personally know that I am an extremely nervous and distrusting passenger (I have been the unlucky passenger in many car accidents), on top of being a major control freak. So, this whole combination doesn't sound so great to begin with. Add in a trip to Århus, which according to krak.dk will take 1 hour and 39 minutes, and it is a recipe for disaster. After missing our first turn and taking a detour, we were back on track, only to miss another turn, followed by another. It took us a little over 3 hours to make it, but we finally arrived! We left Holstebro at 3:30 and arrived in Århus around 7:00pm. We had a great time, filled with lots and lots of food and family, and 2 hours later we were back on the road. Thankfully, we didn't get lost this time. We arrived home safely just before 11pm. We were both exhausted and sore from the stress of the trip, but it was still a good night. I'm pretty sure I was asleep the moment my head hit my pillow, and as always, morning came far too quickly.

ReplyDeleteWhat a great week! Lol about the getting lost thing- totally have been there before when you don't know the names or don't have a good map. I'd eat that pie any day!
