Spicy Kale Chili


Ok, I know most people don't particularly like kale. I don't blame you. It's a tough, spicy green that is difficult to pair with many dishes. However, I have found a winner!

Last night I had the urge to make chili for dinner.

Instead of buying a chuck roast, I used 14-18% fat ground beef.

I heated some olive oil in my pot, added the beef, then added 5 cloves of minced garlic and 1 large onion, chopped.

I let it cook until the meat was brown and the onions were soft.

Then, I mixed 2 large tablespoons of flour with about 1/4 cup of New Mexico chili powder, 2 tablespoons of cumin, 2 tablespoons of smoked paprika, 1 teaspoon of cayenne, 1 tablespoon of oregano (Mexican oregano is best for this), and about 1 tablespoon each of onion and garlic powder.

I added the spices to the meat mixture and stirred it all up. Then, I added 2 cups of beef broth to the pot and let simmer.

I then decided, it needed some veggies added, and added 1/2 a bag (about 100 grams) of shredded kale. Once it began to wilt, I added about 1/2 a bag of frozen corn to the pot.

Stirred it all up and tasted to make sure it was well seasoned. If it's not to your liking, add more of whatever you think it needs. If it's too potent, add more water.

I let it simmer for about 45 minutes from here.

When it's all done serve with cheese, chopped onion, corn or flour tortillas, chips, Fritos, anything you want.

The flavors in this chili melded together beautifully, and as with all chili recipes, it's even better today!
