Tortilla Pizzas



Do you remember the Pizza Party post? Well, we finally made pizza again! Neither one of us can ever remember from time to time what we put on pizza, so almost every time they're different. Luckily they're always delicious!

Start with your tortillas (we usually get the lowest calorie tortillas available).

Put them on your pan.

Get out the EVOO and Greek (or Italian) seasoning.

Pour the EVOO into a large spoon (about 1 tablespoon).

Spread onto tortilla.

Sprinkle seasoning on top.

Get the parmesan cheese (We're poor, so we use the cheese in a can, but I recommend freshly grated parmesan.)

Sprinkle some on top of the tortilla.

If you're brighter than I was, you will have prepared your toppings before getting the tortillas out, and if not, then you need to get to work.

Start with your chicken, mine was brined prior to packaging, so I only add a bit of garlic powder, black pepper, and more of the Greek seasoning. Then cook it up however you desire.
 

In  the meantime, thinly slice up some zucchini and onions. Place in a pan and drizzle with EVOO, salt, and pepper. Roast for about 15-20 minutes at 200C (400F).

Remove and set aside to cool.

Slice up some mushrooms and saute.

Crumble some feta.

Remove your cooked chicken, and slice up (or chop).

Get out your mozzarella.


Now start piling it all on.

I added some bell peppers my husband cut up, and some pepperoni (for good measure).

Pop in the oven (200C 400F) for about 20-ish minutes.


Remove and let cool for a minute or five.

If you're looking for something different, you can add peas, peanuts, red and yellow bell peppers, and potatoes to your pizza. These are my husband's staples, he adds them to pretty much everything he possibly can.

Now, dig in!

  4. Looks yummy!It was interesting what you said about the parmesan - in the states I think that canned parmesan is more expensive- I think about buying it sometimes for recipes but I don't want to plunk down $5 for a can when I can get a wedge for $3 or less. :)

  8. They're very similar to a thin crust. If you try them, let me know how you like them. Depending on what all you put on them, they can be very low calorie. Most of the time one entire pizza piled high is only around 400 calories. (I am a pretty strict calorie counter.)
